"Smart" Halava Recipe: Number of servings = 4

 

1 cup farina (cream of wheat--not quick or instant)

1 cup sugar

1 stick (1/4 lbs.) butter (lightly salted or unsalted)

2 1/4 cups water (or whey or half water/half milk)

pieces fresh or dried fruit and/or nuts (optional)

 

This recipe requires 2 pots and 2 burners. Add the water and

then the sugar to one pot and bring to a boil. Turn down the

flame so that the mixture just stops boiling. Simultaineously,

melt the butter in the other pot, add the farina, and cook over

a medium flame while constantly turning over with a spatula, so

as to avoid burning. After about 15 to 30 minutes, when the

texture of the farena is like sand, turn down the flame (Now is

a good time to add the optional fruit and/or nuts to the water/

sugar mixture.) and slowly add the steaming hot water/sugar

mixture. Turn the flame back up to medium, and stir until

thick. Turn the flame off, and serve while still warm.
